My Favorite Halibut Recipe

Skip's Almond Crusted Halibut

4 Servings
6 - 2 ounce halibut pieces, filleted
1 cup almonds sliced
1 cup almonds crushed
2 eggs
1 cup milk
1 cup flour
1 cup olive oil
2 cups bread crumbs

Cut halibut into 6 inch by 2 inch strips. Lightly dust fish portions with flour: combine the milk and eggs, and dip the flour coated fish into the egg mixture. Combine bread crumbs and almonds and thoroughly coat the fish with the almond mixture. Fry the fish until golden brown. Serve as is, or with Buerre Blanc Sauce.
